Its the start of summer here in Hong Kong so the weather is getting hoooooooootttttttttttt! Hence, it is the best time to make winter melon soup. The taste of the soup is very light and refreshing. In addition, winter melon also has a cooling effect so it is pretty much the perfect summer soup to cook. If you have a slow cooker like me, simply put all the ingredients into the cooker and switch it to auto cook function before you leave for work. By the time you get back from work, you will have delicious soup waiting for you!
Winter Melon Soup
600g winter melon, chopped into chunks
400g lean pork
1 corn, chopped into 2
handful of red dates, washed
3 medium size bowls of hot water
1. Cut the pork into medium size cubes. Pour some boiling water over the cubes of pork to seal their surfaces. This step will also ensure the end result is a clear soup.
2. In a pot, bring the water to a boil. Add in all the ingredients and bring it to a boil at medium fire. Let the soup boil for 15 minutes at medium fire. Next, lower the fire and continue to let it simmer for 1.5 to 2 hours. Add salt to taste.
3. For those using a slow cooker, simply add all the ingredients into the cooker and turn it to auto function. Leave it for 4 -5 hours. Serve hot.
